Chicken & Bacon Enchiladas

I’m no long a blogging virgin! Let the posting begin 🙂

This was the husbands idea. Well the bacon part. The enchiladas were my idea. And I’m still not sure if I liked the bacon. But hey enchiladas are pretty easy and easy dinners with a 10 month old are fantastic! 

Recipe: Chicken & Bacon Enchiladas

1 lb uncooked boneless chicken thighs cubed

3 to 4 strips bacon broken into small pieces

1 8oz package cream cheese, cut into cubes

1 small can chopped green chiles (or jalapenos if you like it hot)

5 Large flour tortillas

1 19oz can green chile enchilada sauce

1 cup shredded cheddar cheese (you can use other cheeses if you prefer. I used some Jarlsberg)

Directions: Brown chicken and bacon in pan. Mix in chiles and cream cheese. Divide evenly between tortillas and arrange in 13x9in pan. Top with green chile sauce and cheese. Bake 20min at 400 degrees.
