Hello Wednesday!

Hello Breakfast!

I absolutely love when the weather decides to be decent enough so I can have fresh berries everyday for breakfast! And peaches with this yogurt…

No half the fat here. I’m breastfeeding, its okay. I need that extra fat. And I need this left over piece of Spinach Mushroom Dubliner Quiche.

And a piece of Dave’s Killer Bread with natural peanut butter smothering it.  

Seriously this stuff is AWESOME!

Well actually all of this was awesome.

See these beauties? These little suckers are called Chewbeads. I’ve been waiting on them for weeks!  And there they were, waiting for me when I got home from craft group. I’m pretty sure Zane knew they were for him. Okay both of us. But he knew cause as soon as I put them on he wanted to grab them and then of course chew on them. Which is exactly what they are for. I have a smart child.

He’s pretty cute too.

Especially when he’s crawling around wearing his cloth diapies 🙂 There is just something about a little baby butt in cloth diapers. So stinking cute. Pardon my pun. Har har.

Tonight my good friend Stefanie and her husband came over with their son CJ, who is 3 days older then Zane for dinner.

And we made this. How good does this look?

I am referring to not only the Spanakopita and French bread (I forgot to take a picture of my Greek salad) but also to this fantastic plate. This was Cody’s first Father’s Day gift. Zane helped. Yep that’s one of his little mitts. I actually made this plate with Stefanie so it’s only fitting to share it in this post 🙂

We had a great evening. I should have got more pictures but I was busy cooking. I usually have more prepared so I can visit but I decided to plant some creeping thyme that I bought at Home Depot a couple days ago…… And then I decided to prep some wood for a crafty 4th of July project. Then Zane got hungry. And then I realized I was out of onion. You can’t make Spanakopita without onion! But Stef bought an onion and I just had to wait to start dinner till they came over. So all was not lost. I got a few things done that needed to be done (okay the wood preping was maybe just for my sanity, I’ve been thinking about it all week!).

It’s way past my bed time so I’m off to bed. And those 4 loads of laundry that need folding, they can wait till morning.

Easier Than Pie Peach Cobbler

Here are your  ingredients. Pretty minimal huh?

4 cups fruit (I used peaches cause they were on sale for less then a dollar a pound)

1 1/2 cups Flour

2 tsp baking powder

1/4 tsp salt

1 1/2 cups milk

1 cup sugar

1 stick butter

9x13in pan

Start by turning your oven to 350 degrees and place your stick of butter into your 9x13in dish.

While the butter is melting go ahead and cut up your fruit. These peaches are about 1/2 in thick. If you don’t like the skin feel free to peel your peaches. And if you don’t like peaches then use four cups of berries or whatever your little heart desires.

Measure out your dry ingredients into a medium bowl. Stir. Then add your milk and stir.

Add in your sugar and stir. Use less or more sugar depending on what kind of fruit you use. If your using caned peaches you want to add less. But if your adding say, rhubarb use more.

At this point, check your pan. When the butter is melted remove it from the oven and add your mixture.

Don’t stir! Add your peaches, fruit, whatever your using, on top.

Stick your pan of deliciousness in the oven for 40-50 minutes or until its all golden brown…

Let cool for 5-10 minutes before serving. Its best warm and great with vanilla ice cream, but honestly I like it best just by itself. And by like I mean love. I had already dug in well before dinner was even ready. But hey, there is nothing wrong with having your dessert first. Not in my book! So enjoy 🙂

Day visit from my Momma

Guess who got a visit from this lovely lady?

That’s right me! Oh, and Zane. I think she came more for Zane anyways. I did tell her that he would be walking before she knew it. In fact Grandma might have missed Zanes last days crawling if she hadn’t of come. Well that’s what I told her 🙂

She even came bearing gifts! Peonies, my favorite 🙂 I’m not sure my husband knows this.

And she made this for me. We stopped at one of the nurseries in town. She even gave me this wood planter with a matching one a couple months ago. Yes, they were still empty. I know. I didn’t even fill them! What my mother must think of me. Hahaha I think that’s why she took pity on me and filled this one up! Thanks momma 🙂

Ok I had to post a picture of this one too. She lugged this with her, a soaker hose and a baby gate. Did I mention she came on the ferry and walked across? Gosh my mother is amazing! I’m sure the looks she got from people were better then the time she lugged a sewing machine with her. She said people were staring at her as if she had a bomb. Hahaha

Ok back on track! Well we had a pretty fantastic day doing pretty much nothing of importance. Just getting some good quality Grandma time in 🙂

Did I mention it was a beautiful day out? It actually felt like summer! I know, shocking! Summer in Washington in June? Pretty much unheard of! So we took advantage and went on a walk along the water 🙂

Its no surprise Zane passed out.

How can you not love this cute little boy? Gosh look at those squishy little cheeks and blonde locks. ADORABLE

Isn’t that view awesome? The water, not me. Hardly a cloud in the sky!

She even stayed for dinner and we made fresh spring rolls with peanut sauce. YUMMMMM! I had left overs for lunch and dinner the next two days. I know. But I love fresh spring rolls especially with peanut sauce. I will be making these again soon and posting pictures and the recipe 🙂

But this post has already become entirely too long. And Zane is in need of a bath and some of Momma’s milk. Oh gosh I just made myself sound like a cow :/

Chicken & Bacon Enchiladas

I’m no long a blogging virgin! Let the posting begin 🙂

This was the husbands idea. Well the bacon part. The enchiladas were my idea. And I’m still not sure if I liked the bacon. But hey enchiladas are pretty easy and easy dinners with a 10 month old are fantastic! 

Recipe: Chicken & Bacon Enchiladas

1 lb uncooked boneless chicken thighs cubed

3 to 4 strips bacon broken into small pieces

1 8oz package cream cheese, cut into cubes

1 small can chopped green chiles (or jalapenos if you like it hot)

5 Large flour tortillas

1 19oz can green chile enchilada sauce

1 cup shredded cheddar cheese (you can use other cheeses if you prefer. I used some Jarlsberg)

Directions: Brown chicken and bacon in pan. Mix in chiles and cream cheese. Divide evenly between tortillas and arrange in 13x9in pan. Top with green chile sauce and cheese. Bake 20min at 400 degrees.

Serve and enjoy,

Hello world!

I did it! I started a blog. Bare with me on this though. I’m sure it will be a bumpy journey…at least for awhile!

I’ve actually been wanting to start a blog for about 6 months now. Its a great way to stay in touch with family and friends since not everyone has Facebook and email gets a bit boring. In my opinion 😉 And I love to share with everyone what we’re up to during the week.

I’m hoping that eventually I’ll be able to do a new post everyday during the working week. We’ll see how long it takes me to get there! In the mean time I hope you enjoy some of the recipes we’ve been trying, the DIY or do it yourself crafts that I crank out weekly and some of our weekly activities!
